Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rolls
Soak up milk to form a soft, moist body that holds the pudding together.
Eggs
Bind the mixture and set as it cooks, giving the pudding its firm, sliceable structure.
Milk
Softens the rolls and adds moisture so the pudding stays tender when cooked.
Currants
Add concentrated sweetness and chewy fruit pieces throughout the pudding.
Butter
Adds richness and fat, contributing to a tender texture and flavor.

The step that matters

Squeeze out the excess milk from the soaked rolls. Too much liquid left in the rolls thins the custard-like mixture, so it may set loosely or turn watery when steamed.

Swap the currant

How well each one fits the dish's main ingredients (milk, egg, butter, sugar, cinnamon, raisin):

  1. Vanillafits better

  3. Applefits better
  4. Currantthe original

Fit is the average pairing score against milk, egg, butter, sugar, cinnamon, raisin. Candidates are from the same food group and used in at least 100 recipes.
