Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the dessert a smooth, creamy body.
Lemon juice
Adds acidity that brightens the sweetness and balances the richness of the cream.
Strawberries
Contribute fruit flavor, sweetness and moisture to the mixture.

The step that matters

Adding the lemon juice drop by drop. Acid added quickly to warm dairy can cause it to curdle. Letting the mixture cool nearly to room temperature and adding the juice slowly helps keep the cream smooth.

Swap the lemon

How well each one fits the dish's main ingredients (cream, apricot):

  1. Vanillafits better
  2. Strawberryfits better
  3. Peachfits better
  4. Lemonthe original
