Why it works: Apple and lemon are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 7,551 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Apple Jelly
Ingredients
Directions
Prepare the apples
Wipe the apples, cut off the stalks, and halve them.
Mix the apples in a basin with a small quantity of cold water and lemon juice as you cut them.
Drain the apples and place them in a preserving pan.
Add just enough water to float the apples.
Add the juice of 2 lemons.
Make the jelly
When the apples are soft, strain the juice through a sieve without pressing.
Weigh the juice and add the same weight of crushed sugar.
Boil in the pan for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Provide natural pectin and acid that help the juice set into a jelly.
- Crushed sugar
- Sweetens the jelly and helps it set firm when boiled with the juice.
- Lemon juice
- Adds acidity that supports pectin setting and keeps the apples from browning.
The step that matters
Strain without pressing. Pressing the apples forces cloudy pulp and solids through the sieve, which makes the jelly cloudy. Letting the juice drip through alone keeps it clear.
Swap the lemon
How well each one fits the dish's main ingredients (apple, sugar):

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
