Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Melons
Provide the main body of the pickle, which becomes tender through simmering.
Cold vinegar
Acidifies the melon during the long soak, helping preserve it and give it tang.
Sugar
Sweetens the syrup and helps preserve the melon slices.

The step that matters

Simmer gently until tender. Simmering gently softens the melon without breaking the slices apart. A hard boil can make the flesh mushy and ragged, so the slices may fall apart before they are ready for the syrup.

Swap the clove

How well each one fits the dish's main ingredients (melon, vinegar, sugar):

  1. Peppermintfits better
  2. Cinnamonfits better
  3. Gingerfits better

Fit is the average pairing score against melon, vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
