Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the creamy base of the soup and gives it body and richness.
Flour
Thickens the milk as it cooks, giving the soup a smooth, body-rich texture.
Butter
Adds fat for a rounder, silkier mouthfeel and richer flavor.
Celery
Provides the main vegetable flavor and, when mashed, the soup's substance.

The step that matters

Add the flour mixture to the boiling milk. Flour mixed only with cold liquid stays dispersed; adding it to hot milk while stirring lets starch granules swell evenly, so the soup thickens smoothly without lumps.

Swap the mace

How well each one fits the dish's main ingredients (milk, flour, butter, celery, onion, pepper, cream):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against milk, flour, butter, celery, onion, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
