Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. In a bowl, combine cold mashed potatoes, beaten egg white, butter, and salt.

  2. Roll the mixture into balls the size of an egg.

  3. Dip each ball in the egg yolk.

Bake and serve

  1. Place the balls on a buttered baking pan.

  2. Bake at 400°F (200°C) until light brown.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the puffs and give a soft, moist interior.
Egg white
Binds the potato mixture and helps the puffs hold their shape and lighten.
Butter
Adds fat for richer flavor and a tender texture.
Egg yolk
Coats the outside so the puffs brown richly in the oven.

The step that matters

Dip each ball in the egg yolk. The yolk coating is what browns the surface in the oven. Uneven or thin coating leaves pale patches, so coat each ball fully before placing it on the pan.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter):

  1. Asparagusfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against egg, butter. Candidates are from the same food group and used in at least 100 recipes.
