What each ingredient does

Beef suet
Adds richness and fat that keeps the pudding moist and tender as it bakes.
Molasses
Provides deep sweetness, dark color, and a caramel-like flavor.
Sour cream
Adds moisture and tang, helping the pudding stay soft and balanced in flavor.
Sugar
Sweetens the pudding and contributes to browning and a set texture as it bakes.
