Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides the rich body and fat that give the syllabub its creamy texture.
Lemon juice
Adds acidity that brightens the cream and balances its sweetness.
Isinglass
Gelatin-like setting agent that firms the mixture as it cools.
Sweet wine
Adds sweetness and fruity aroma to the cream base.
Brandy
Adds alcoholic warmth and aroma to the cream base.

The step that matters

Boil slowly until the isinglass is completely dissolved. Isinglass must fully dissolve before it is stirred into the cream; undissolved pieces will not set evenly and leave a grainy texture. Gentle heat helps it dissolve without scorching the liquid.
