Bread-and-Butter Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dish

  1. Preheat the oven to 350°F (175°C).

  2. Butter the inside of an open pie dish.

Layer the bread and fruit

  1. Layer the bottom with slices of buttered bread.

  2. Sprinkle a few well-washed currants and some halved raisins over the bread.

  3. Add another layer of bread and repeat the currant and raisin sprinkling until the dish is half full.

Make the custard and bake

  1. In a bowl, beat the eggs and mix with an equal amount of milk.

  2. Sweeten the mixture liberally and add rose or vanilla extract if desired.

  3. Pour the egg mixture over the layered bread.

  4. Bake in the oven for about 30-40 minutes until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard so the bread is held in a soft, sliceable structure.
Milk
Supplies the liquid that soaks into the bread and gives the pudding its moist texture.
Bread
Absorbs the custard and forms the body of the pudding.
Sugar
Adds sweetness and helps the top brown lightly in the oven.
Currants
Add sweetness and chewy bursts of fruit through the layers.
Raisins
Add sweetness and chewy bursts of fruit through the layers.

The step that matters

Bake until set. Egg proteins coagulate as the custard heats; underbaking leaves a wet, loose center, while overbaking can make the custard grainy and weep.

Swap the currant

How well each one fits the dish's main ingredients (butter, bread, raisin, egg, milk, sugar, rose):

  1. Vanillafits better
  2. Figfits better
  3. Raspberryfits about as well
  4. Currantthe original

Fit is the average pairing score against butter, bread, raisin, egg, milk, sugar, rose. Candidates are from the same food group and used in at least 100 recipes.
