Why it works: Endive and shallot share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 30 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓

To Dress Endive

Ingredients

Directions

Prepare the endive

  1. Pick and wash the endive, ensuring it is free from insects.

  2. Boil the endive in salted water, changing the water 2-3 times to reduce bitterness, for about 30 minutes until tender.

  3. Transfer the endive to cold water for 10 minutes, then drain and press it dry.

Cook and serve

  1. Chop the endive and place it in a saucepan with butter and minced shallot.

  2. Add salt and powdered sugar, stir, and cook for 10 minutes until smooth.

  3. Serve with roast mutton or cutlets, or alone with sippets.

What each ingredient does

Green curled endive
Forms the bulk of the dish and becomes soft and tender when boiled and then cooked down.
Butter
Adds fat and richness, giving the cooked endive a smooth, silky texture.
Minced shallot
Adds a mild, aromatic onion-like flavour as it softens in the butter.
Powdered sugar
Adds a little sweetness that balances the endive's natural bitterness.

The step that matters

Changing the boiling water. Endive contains bitter compounds that leach into the cooking water. Replacing the water during boiling removes more of them, so the final dish tastes milder.

Swap the endive

How well each one fits the dish's main ingredients (butter, shallot, sugar):

  1. Chivefits better
  2. Leekfits better
  3. Mustardfits better
