To Roast Ducks

Ingredients

Directions

Prepare the duck

  1. Truss the duck like a goose, ensuring the skin is smooth by removing feather stumps.

  2. Leave the feet on, plunge them into hot water to skin, and cut off the tips of the toes.

  3. Truss the feet at the back close to the legs.

  4. Fill the duck with sage and onion stuffing.

Roast and serve

  1. Roast the duck at a distance from a clear fire, basting well for 40 to 50 minutes.

  2. Serve with good brown gravy.

What each ingredient does

Young duck
Provides the main meat, whose rich fat renders and crisps the skin during roasting.
Sage and onion stuffing
Flavours the bird from inside and adds moisture as it cooks.
Brown gravy
Adds savoury depth and moisture to balance the rich, fatty meat.

The step that matters

Roast at a distance from the fire and baste well. Gentle, indirect heat lets fat render slowly so the skin crisps without scorching, while regular basting keeps the surface moist and evenly browned.
