Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Garlic
Provides the main pungent flavour, which mellows noticeably after boiling.
Egg yolks
Emulsify the oil and give the sauce a rich, thick body.
Oil
Adds fat that carries flavour and gives the sauce a smooth, silky texture.
Anchovies
Add a savoury, salty depth that supports the garlic.
Vinegar
Adds acidity that brightens the sauce and balances the richness of the oil and yolks.
Hard-boiled eggs
Add mild, firm egg flavour and texture as a topping.

The step that matters

Blending the garlic, yolks and oil. Oil must be added gradually to the egg yolks and garlic so it emulsifies; adding it too fast can split the sauce into separated oil and liquid.

Swap the garlic

How well each one fits the dish's main ingredients (clove, pepper, egg, vinegar):

  1. Allspicefits better
  2. Tarragonfits better
  3. Nutmegfits better
  4. Garlicthe original

Fit is the average pairing score against clove, pepper, egg, vinegar. Candidates are from the same food group and used in at least 100 recipes.
