Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumb
Forms the bulk of the pudding and absorbs the milk to give it body.
Eggs
Bind the mixture and set during steaming to give a firm, sliceable texture.
Butter
Adds richness and moisture, softening the crumb texture.
Milk
Softens the bread crumb so it can be pressed and beaten smooth.
Jam
Adds sweetness and fruity flavour between the layers.

The step that matters

Steam for 1.5 hours. Steaming gently at a steady heat lets the eggs set evenly through the layers. Too much heat or boiling can make the pudding rough, watery or break its structure.

Swap the raspberry

How well each one fits the dish's main ingredients (milk, bread, butter, sugar, egg):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Raspberrythe original

Fit is the average pairing score against milk, bread, butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
