What each ingredient does

Gram dal
Provides protein-rich body and a soft, creamy texture as it cooks down with the rice.
Raw rice
Supplies the starch that gives the dish its bulk and soft, cohesive texture.

The step that matters

Simmer until both dal and rice are cooked through. Dal and rice cook at different rates, and gram dal needs its soaking to soften fully. Undercooked dal stays firm and grainy, while overcooked rice turns mushy. Checking both for doneness ensures an even texture throughout.
