Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberry jelly or jam
Provides the raspberry flavor, sweetness, and fruit solids that give the cream its body.
Pounded loaf sugar
Adds sweetness and lowers the freezing point, keeping the cream softer when frozen.
Lemon juice
Adds acidity that brightens the raspberry flavor and balances the sweetness.
Ice
Chills the freezing pot so the mixture freezes.

The step that matters

Turning the pot in the salted ice. The cream must be scraped down and turned evenly as it freezes. Without this, large ice crystals form and the texture turns grainy instead of smooth.

Swap the raspberry

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
