Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Split peas
Break down during long simmering to thicken the soup into a pulp.
Dripping
Adds fat that carries flavour and gives the soup a richer mouthfeel.
Onions
Build a savoury base of flavour as they soften in the soup.
Brown sugar
Adds a touch of sweetness that rounds out the savoury flavours.
Bones
Release gelatin and flavour into the water, adding body and depth to the stock.

The step that matters

Skim off scum before it boils. Scum rising from the surface contains impurities that can cloud the soup and taint its flavour if they are allowed to boil into it.

Swap the mint

How well each one fits the dish's main ingredients (peas, onion, turnip, carrot, celery, sugar, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Mintthe original

Fit is the average pairing score against peas, onion, turnip, carrot, celery, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
