Why it works: Apple and clove are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,774 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓
Baked Apple Dumplings
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Peel and core the apples without quartering them.
Divide the pastry into 6 or 8 pieces and form them into small rounds.
Assemble
Place an apple on each round, fill the centers with sugar and two cloves.
Cover the apples with the pastry, wet the edges, and press them together.
Place the dumplings join-side down on a greased baking sheet.
Bake
Bake for about 40 minutes, or until golden brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Provide the fruit filling that softens and becomes sweet and aromatic as it bakes.
- Short pastry
- Forms a rich, crisp shell that encloses the apple and browns in the oven.
- Sugar
- Sweetens the filling and helps the apple juices become syrupy as they cook.
The step that matters
Pressing the pastry edges together. Wetting and sealing the edges keeps the pastry closed so juices and syrup stay inside the dumpling rather than leaking out and scorching on the sheet.
Swap the clove
How well each one fits the dish's main ingredients (apple, sugar):
- Cinnamonfits better
- Gingerfits about as well
- Clovethe original
- Nutmegfits less well
Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
