Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Peel and boil the onion until tender, then chop it finely.

  2. Chop the meat and potatoes into small pieces.

Assemble

  1. Roll the paste out to about ½ inch thick and cut it into rounds.

  2. Place a little of the meat, onion, and potato on each round and sprinkle with salt and pepper.

  3. Wet the edges of the paste, press them together, and create a frill on top.

  4. Insert a knife beneath the frill to allow steam to escape.

Bake

  1. Bake on a greased baking sheet at 400°F (200°C) for about 30 minutes.

What each ingredient does

Buttock steak
Provides the main meaty filling that becomes tender during baking.
Parboiled potatoes
Add bulk and moisture to the filling, softening as the pasty bakes.
Short paste
Forms the sealed case that holds the filling and bakes to a crisp, golden shell.

The step that matters

Sealing the edges and making the frill. Wet edges must be pressed firmly together, or the seam can open in the oven and let juices leak out. The knife vent lets steam escape so the pastry does not burst.

Swap the onion

How well each one fits the dish's main ingredients (potato, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
