Ingredients

Directions

Brine the onions

  1. Peel the onions.

  2. Boil a strong solution of salt and water, then pour it over the onions.

  3. Let the onions stand in the saltwater for 24 hours, keeping the vessel covered to retain steam.

  4. After 24 hours, wipe the onions dry.

Pickle and store

  1. Boil the vinegar, peppercorns, and ginger together.

  2. Pour the boiling mixture over the onions, ensuring they are completely covered.

  3. Cover the vessel tightly and store for several weeks until ready to use.

What each ingredient does

Onions
Are the main vegetable; the brine softens them and the vinegar preserves them.
Vinegar
Acidity preserves the onions and gives them their sharp, tangy flavour.
Coarse sea salt
Draws moisture out of the onions and seasons them during the saltwater soak.
Peppercorns
Add a pungent, aromatic heat that infuses into the hot vinegar.
Ginger
Adds a warm, aromatic note that infuses into the hot vinegar.

The step that matters

Covering the vessel for the 24-hour saltwater soak. Keeping the vessel covered traps steam and reduces evaporation, so the brine stays hot and the salt penetrates the onions evenly, drawing out moisture and mellowing their sharpness.

Swap the ginger

How well each one fits the dish's main ingredients (onion, vinegar):
