Devilled Lobster

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the meat from the lobster and cut it into small dice.

  2. Make a salad dressing using butter instead of oil, then mix it with the lobster meat.

  3. Add cayenne pepper and 3 tablespoons of bread crumbs to the mixture.

  4. Place the mixture back into the lobster shell.

Bake and serve

  1. Top with additional bread crumbs and small bits of butter.

  2. Bake in a preheated oven at 400°F (200°C) for 20 minutes, or until browned.

What each ingredient does

Lobster
Provides the main protein and the body of the filling.
Butter
Replaces oil in the dressing, adding richness and moisture to the filling.
Bread crumbs
Absorb moisture and add a light texture, then brown on top in the oven.

The step that matters

Baking until browned. The filling is already cooked through, so the bake mainly browns the crumbs and butter on top. Too little time leaves the top pale; too long can dry out the lobster.
