Why it works: Sugar and gelatin are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,778 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lemons
- Provide the juice for sharp acidity and the rind for aroma.
- Gelatin
- Sets the liquid into a firm, wobbly jelly.
- Lump sugar
- Adds sweetness that balances the lemon's acidity.
- Sherry
- Adds a warm, aromatic flavour to the jelly.
The step that matters
Skim off the foam when the mixture comes to a boil. Foam that is left in the pan sets into the jelly and makes it cloudy. Skimming removes the impurities that rise to the surface, so the straining step produces a clearer, more attractive jelly.
