Mutton, Roast Loin of
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 400°F (200°C).
Cut and trim off excess fat from the loin of mutton.
Season the meat with a little coarse sea salt.
Roast and serve
Roast in the oven until nicely browned, about 2 hours for a 7 lb loin.
Remove from the oven, dish the meat, and pour off the drippings.
Add some boiling water, slightly salted, and strain it over the joint before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
