Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the soup as it cooks, giving it body.
Eggs
Egg yolks enrich the soup and add body when stirred in at the end.
Butter
Adds richness and fat, giving a smoother mouthfeel.
Potato
Breaks down during long boiling, adding starch that thickens the soup.

The step that matters

Adding the soup to the egg yolks. Pouring hot soup over the yolks and stirring well gradually warms them. If the soup is added too quickly or left too hot, the yolks can scramble, so stir constantly while pouring.

Swap the mustard
