What each ingredient does

Oat meal
Starch in the oats swells and gelatinises in hot water, thickening the porridge.

The step that matters

Adding the oat meal gradually while stirring. Oats thicken quickly and can settle and scorch on the base of the pan. Adding them slowly and stirring disperses the grains, prevents lumps, and keeps the bottom from burning.
