Lemon Tapioca Custard

Ingredients

Directions

Soak the tapioca

  1. Soak the tapioca in the quart of cold water for 3 hours if fine, or 5 hours if coarse.

Make the custard

  1. Heat the milk to a boil in a double boiler.

  2. Add the soaked tapioca and its water to the boiling milk.

  3. Stir constantly until it boils again.

  4. Cook for 10 minutes until the tapioca is well dissolved.

  5. Beat the yolks, half the sugar, and the juice of one lemon in a separate bowl.

  6. Stir in a little of the hot mixture. Add more hot mixture.

  7. Combine everything. Heat again to a boil. Stir.

  8. Cook for 5 minutes until the custard thickens.

  9. Pour the custard into a dish.

Top and serve

  1. Cover with a meringue made from the egg whites, remaining sugar, and lemon juice.

  2. Brown the meringue slightly.

  3. Serve cold or lukewarm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and thickens the milk as it cooks, giving the custard its body.
Eggs
Yolks thicken the custard when heated, and whites whip into the meringue topping.
Sugar
Sweetens the custard and helps stabilise the meringue.
Lemon juice
Adds acidity that brightens the flavour of the custard and meringue.
Milk
Provides the liquid base and richness for the custard.

The step that matters

Stir in the hot mixture gradually. Adding hot liquid to the egg yolks slowly, while stirring, warms them gently so they do not scramble. Adding it all at once can curdle the eggs and leave the custard lumpy.
