Lemon Tapioca Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Soak the tapioca in cold water early in the morning, warming it to body heat without cooking.

  2. Two hours before dinner, pour the tapioca into a double boiler, add half the lemon juice and half the sugar, and mix well.

  3. Heat thoroughly, stirring frequently, and cook for 1.5 hours until the tapioca is clear.

Bake and serve

  1. Pour into a pudding dish, beat the egg whites with the remaining lemon juice and sugar, and spread over the top.

  2. Bake in a preheated oven at 400°F (200°C) for 10 minutes until slightly browned.

  3. Serve cold or nearly cold with cream, fruit, or fruit juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the liquid as it cooks, turning it clear and gel-like into a pudding.
Egg whites
Beaten and spread on top, they set and brown lightly in the oven, forming a meringue topping.
Sugar
Sweetens the pudding and helps the meringue topping brown and stay glossy.
Lemon juice
Adds acidity and bright flavour that balances the sweetness of the pudding and topping.

The step that matters

Cooking the tapioca until clear. Tapioca starch must be heated fully and stirred often so the starch granules swell and gelatinize evenly. Undercooked tapioca stays cloudy and grainy, and it can scorch on the bottom of the double boiler if left unattended.
