Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provides the main body and soft, moist interior of the croquettes.
Breadcrumbs
Absorb moisture and give the outside a crisp, golden crust when fried.
Egg
Binds the mixture so the patties hold their shape during frying.
Melted butter
Adds fat for richer flavour and a tender texture inside the croquettes.

The step that matters

Fry the patties until nicely browned on both sides. Shaped patties are fragile and the oil must be hot enough to brown the crust quickly. If the heat is too low, the croquettes absorb oil and may fall apart before the outside sets.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, parsley):

  1. Shallotfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, egg, parsley. Candidates are from the same food group and used in at least 100 recipes.
