Potato Biscuits

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Separate the egg yolks and whites into two bowls.

  2. Beat the yolks with the fine sugar until light in color.

  3. Scrape the lemon peel, dry it, and pound it finely.

  4. Mix the lemon peel with the yolks.

  5. Whip the egg whites until stiff.

  6. Fold the stiff whites into the yolk mixture.

  7. Sift the potato flour over the egg mixture.

  8. Gently combine.

Shape and bake

  1. Prepare paper cases on a baking tray.

  2. Fill them without overfilling.

  3. Glaze the tops with coarse sugar.

  4. Bake in a moderate oven (350°F / 175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the biscuits lift and an airy, light structure.
Potato flour
Provides a light, tender crumb in place of wheat flour structure.
Fine sugar
Sweetens the batter and, beaten with the yolks, helps build a light texture.
Lemon peel
Adds aromatic citrus oil for fragrance and flavour.

The step that matters

Folding the stiff whites into the yolk mixture. Whites hold air only while they are stiff, so folding gently keeps the batter light. Stirring vigorously deflates the foam and produces dense, flat biscuits.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon, flour):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
