Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Skin and fillet the soles.

  2. Lay some lobster mixture on half of each fillet and fold them over with the skin inside.

  3. Place the fillets on a buttered baking sheet.

  4. Squeeze a little lemon juice on each fillet and cover with buttered paper.

Bake and serve

  1. Bake at 400°F (200°C) for 10 minutes.

  2. Garnish with 6 prepared mussels.

  3. Remove gills from oysters and serve with sauce Cardinal.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soles
Delicate white flesh that turns opaque and flakes when gently cooked.
Lobster mixture
Adds a rich, savoury filling that flavours the folded fillets.
Butter
Adds fat and richness, and keeps the fish from sticking and drying.
Lemon juice
Adds acidity that brightens the mild flavour of the fish.
Chopped truffles
Adds an intense earthy aroma to the filling.

The step that matters

Bake at 400°F (200°C) for 10 minutes. Thin fillets cook quickly. Overbaking sets the proteins too far, squeezing out moisture and leaving the fish dry and tough, so check it as the time nears its end.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (lobster, truffle, butter):

  1. Lemonthe original
  2. Vanillaabout as good a flavor fit

Fit is the average pairing score against lobster, truffle, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
