Why it works: Sauce and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 4,787 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Cold Cucumber Sauce
Ingredients
Directions
Prepare the cucumber
Peel the cucumber and cut it into thick slices.
Boil the cucumber slices in slightly salted water until tender, then drain.
Rub the cucumber through a fine sieve into a saucepan.
Make the sauce
Add the white sauce to the cucumber puree, stir well, and bring to a boil.
If the mixture is too thin, reduce it slightly.
Allow the mixture to cool, then add the Mayonnaise.
Whip the cream and fold it into the mixture.
Season with salt, pepper, and cayenne, then add a few drops of green food coloring.
Serve cold in a sauceboat.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cucumber
- Forms the main body and flavor of the sauce when pureed.
- White sauce
- Thickens the cucumber puree into a smooth, body-rich sauce.
- Mayonnaise
- Adds richness and fat, giving the cooled sauce a creamy texture.
- Cream
- Whipped and folded in to lighten the sauce and add a silky texture.
The step that matters
Reducing the mixture if too thin. Over-reducing can make the sauce gluey or too thick, while too thin a puree will not hold its body once mayonnaise and cream are added.
Swap the cucumber
How well each one fits the dish's main ingredients (pepper, sauce, cream):

Fit is the average pairing score against pepper, sauce, cream. Candidates are from the same food group and used in at least 100 recipes.
