Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce and carries flavour while forming the roux base.
Flour
Thickens the milk into a smooth sauce as it cooks with the butter.
Milk
Forms the liquid body of the sauce and carries the aromatics.

The step that matters

Cooking the roux without browning. Cooking the butter and flour gently for a few minutes cooks out the raw flour taste. Browning changes the colour and flavour, and the starch needs time to hydrate, so the sauce thickens smoothly when the milk is whisked in.

Swap the clove

How well each one fits the dish's main ingredients (onion, celery, carrot, milk, butter, flour, cream):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against onion, celery, carrot, milk, butter, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
