  1. Dissolve the gelatin in the apricot syrup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the mixture into a firm, sliceable cream as it cools.
Double cream
Adds richness and a soft, airy texture when whipped in.
Apricots
Provide the main fruit flavor and body of the cream.
Caster sugar
Sweetens the cream and balances the tartness of the fruit.
Lemon juice
Adds acidity that brightens the apricot flavor.

The step that matters

Stir in the cream at the right moment. If the mixture is still warm, the whipped cream will deflate and lose volume. If it has already set, the cream will not blend in evenly, leaving lumps. Wait until it is cold but still liquid so the cream folds in smoothly and holds its air.
