The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide pectin and body, and the apple pulp that gives the jelly its flavour.
Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Sweetens the jelly and balances the tartness of the apples and lemon.
Lemon rind
Adds aromatic citrus oil and a bright, slightly sharp flavour.

The step that matters

Add the dissolved gelatine and stir occasionally until nearly set. Gelatine sets firmly as it cools, so if the mixture cools too far before pouring it can become lumpy or set unevenly in the mold. Stirring keeps it smooth and evenly distributed while it thickens.

Swap the lemon

How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
