Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid as it cools into a firm, wobbly structure.
Egg whites
Whipped to a foam, they add an airy, light, spongy texture.
Castor sugar
Sweetens the dessert and balances the sharpness of the lemon.
Lemons
The rind adds aromatic lemon oil and the juice adds sharp acidity.

The step that matters

Infusing without boiling. Boiling gelatin weakens its setting power, so the dessert may not set firmly. Keep the mixture just warm while the rind infuses its flavor.

Swap the lemon
