The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly when it cools.
Sugar
Sweetens the jelly and adds body to the set.
Orange juice
Provides the main orange flavour and liquid for the jelly.
Orange rind
Adds aromatic orange oils and a slightly bitter citrus note.

The step that matters

Straining in the orange juice after the boil. Orange juice and lemon juice are added after boiling and cooling so their fresh flavour and aroma are not dulled by heat. Gelatine needs to be fully dissolved before setting, so the mixture should be stirred until clear first.
