Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and lowers its freezing point, keeping it softer and scoopable.
Lemon juice
Adds sharp acidity that balances the sweetness and gives the ice its flavour.
Egg whites
Whipped in, they trap air and give the frozen ice a lighter, stiffer texture.
Lemon rind
Infuses the syrup with aromatic lemon oils during boiling.

The step that matters

Skimming without stirring during the boil. Stirring while the syrup boils can introduce air and cloud the mixture, and skimming removes impurities that would spoil clarity and flavour. Boiling quickly for the stated time concentrates the syrup so the ice freezes with the intended texture.

Swap the lemon

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
