Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mussels
Provide the main body of the stew, and their own liquor adds savoury sea flavour.
Butter
Rolled in flour, it thickens the liquid and adds richness to the stew.
Mace
Adds a warm, aromatic flavour to the stewing liquor.

The step that matters

Shake the saucepan until the shells open. Shaking keeps the mussels moving so they steam evenly, and cooking only until the shells open avoids toughening the meat.

Swap the mace

How well each one fits the dish's main ingredients (butter, flour):

  1. Jalapenofits better
  2. Capersfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against butter, flour. Candidates are from the same food group and used in at least 100 recipes.
