Grenadins with Creamy Sauce

Ingredients

Directions

  1. In a stew-pan, combine egg yolks, 1 ounce of butter, salt, and pepper.

  2. Stir over low heat until yolks thicken.

  3. Remove from heat and stir in 1 ounce of butter.

  4. Return to heat for 2 minutes, then remove and add another ounce of butter.

  5. Repeat this process twice more, using a total of 5 ounces of butter.

  6. Stir until the sauce is rich and creamy, then add tarragon vinegar and chopped parsley.

  7. Serve grenadins arranged around a ring of mashed potatoes, with a slice of crispy bacon between each.

  8. Serve the sauce hot in a boat, and optionally fill the potato ring with flageolets or petits pois.
