Prune Jelly

Ingredients

Directions

  1. Combine lime slices, cinnamon, claret, and water in a saucepan to cover the fruit.

  2. Stew gently until the fruit is tender.

  3. Drain the liquid and stone the prunes.

  4. Pass the fruit through a sieve and save the pulp in a basin.

  5. Crack the stones and add the kernels to the pulp.

  6. Dissolve gelatine in the strained liquor over heat.

  7. Mix the dissolved gelatine with the prune pulp, then add cherry brandy and red wine.

  8. Decorate a plain border mold with blanched almonds.

  9. Fill the mold with the prune mixture and set on ice to form.

  10. When ready, turn out the jelly and fill the center with whipped cream.
