Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly.
Raspberry or strawberry jam or syrup
Adds fruit flavor, color and sweetness to the jelly.
Claret
Provides most of the liquid and a deep wine flavor.
Castor sugar
Sweetens the jelly and balances the wine's acidity.
Lemon
Adds acidity and bright aroma from the rind and juice.

The step that matters

Melting the mixture slowly. Gelatine loses setting strength when it is boiled or overheated, so the mixture should be melted gently and kept from a hard boil to ensure the jelly sets firmly.
