Why it works: Sugar and lemon are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 53,532 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Prunes
- Provide the main body, flavour and sweetness of the mould.
- Gelatine
- Sets the liquid into a firm, sliceable mould as it cools.
- Sugar
- Adds sweetness and balances the tartness of the fruit and lemon.
- Lemon
- Adds acidity and fresh aroma from the rind and juice.
The step that matters
Fully dissolve and strain the gelatine. Gelatine only sets properly once it is completely melted. Straining it into the saucepan removes any undissolved specks, so the mixture sets evenly and smoothly when it cools and turns out cleanly.
