What each ingredient does

Breadcrumbs
Absorb the milk and form the soft body of the pudding.
Milk
Provides the liquid that sets with the egg into a custard-like body.
Egg
Sets the custard when heated and the whipped white adds a light, airy topping.
Butter
Adds richness and a smooth mouthfeel to the pudding.
Sugar
Adds sweetness and helps stabilise the whipped egg white.

The step that matters

Whipping the egg white until stiff. Egg white must be whipped until stiff and folded gently so it holds its air. Overmixing or deflating it leaves a flat topping, while underwhipping lets it slump into the pudding.
