Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells as it simmers, giving the pudding its body and setting structure.
Milk
Cooks with the rice to form a creamy base that sets as it cools.
Castor sugar
Sweetens the pudding and helps it stay tender as it cooks.

The step that matters

Simmer gently until the milk is almost absorbed. High heat can scorch the milk on the pan base and cause sticking, while gentle simmering lets the rice soften evenly. Stopping when the milk is nearly absorbed keeps the pudding moist enough to set smoothly in the mould.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, sugar):

  2. Coconutfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against rice, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
