Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main body and tender texture of the soup.
Stock
Forms the liquid base that carries the flavour of the soup.
Cream
Adds richness and a smooth, silky mouthfeel.
Egg yolks
Thicken the soup gently and add richness when heated without boiling.

The step that matters

Cook for 2 minutes without boiling. Egg yolks thicken through gentle heat; if the soup boils after they are added, the proteins can curdle and the texture turns grainy.

Swap the mace

How well each one fits the dish's main ingredients (celery, cream, egg, pepper):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against celery, cream, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
