What each ingredient does

Cream
Whipped to form the light, airy body of the dessert.
Sheet gelatine
Sets the liquid cream so it holds its shape when chilled.
Brandy or sherry
Adds aroma and flavor to the cream.

The step that matters

Straining the melted gelatine into the whipped cream. Gelatine must be fully melted and fairly cool before it meets the cream. If it is still very hot, it can deflate the whipped cream, and if it has begun to set, it forms lumps and uneven texture.
