Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumber
Forms the body of the soup and gives it its fresh flavour and smooth texture when rubbed through a sieve.
Butter
Melted with flour to form a roux that thickens the soup.
Flour
Thickens the soup as part of a butter roux.
White stock
Forms the liquid base of the soup.
Egg yolks
Enrich the soup and thicken it when stirred in gently with cream.
Milk
Adds richness and body to the soup base.

The step that matters

Adding the egg yolk and cream mixture. Egg yolks thicken when heated but can scramble if the soup is too hot or boils after they are added. Keep the heat low and stir steadily while the mixture is strained in.
