What each ingredient does

Oysters
Provide the main substance and briny flavour of the dish.
Butter
Adds richness and fat to the sauce and carries the flour's thickening.
Flour
Thickens the milk into a smooth sauce as it cooks and boils.
Milk
Forms the liquid base of the sauce, which thickens once it boils.
Cream
Adds richness and body, making the sauce smoother and silkier.
Yolk of egg
Enriches and further thickens the sauce when cooked gently.

The step that matters

Cooking the sauce after adding the yolk. Egg yolk thickens by setting when heated, but if the sauce gets too hot or boils hard after the yolk goes in, it can curdle and turn grainy. Keep the heat moderate and stir while it cooks one minute.
