Orange Jelly

Ingredients

Directions

Make the jelly

  1. In a saucepan, combine boiling water, gelatine, sugar, and orange rinds. Bring to a boil.

  2. Remove from heat and let stand for 10 minutes until the gelatine is dissolved.

  3. In a basin, combine the orange and lemon juice. Strain the gelatine mixture into the juice.

Set and serve

  1. Pour the mixture into small dariole moulds rinsed with cold water.

  2. Once firm, dip the moulds in warm water and turn out onto a cold dish.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm jelly that holds its shape when turned out.
Sugar
Adds sweetness and balances the sharpness of the citrus juices.
Orange juice
Provides the main liquid and orange flavour of the jelly.
Lemon juice
Adds acidity that brightens the flavour and sharpens the citrus taste.

The step that matters

Dissolving the gelatine fully before adding the juice. Gelatine only sets when it is completely dissolved and evenly distributed. Undissolved granules or pouring the mixture in while too hot can leave weak or patchy setting, so the jelly may not hold its shape when turned out.
