What each ingredient does

Tomatoes
Provide the main body, flavor and color of the sauce once softened and sieved.
Butter
Carries flavor from the aromatics and adds richness to the sauce.
Bacon
Releases fat and savory flavor into the butter as it cooks gently.
Shallot
Adds mild aromatic sweetness that blends into the sauce base.
Stock
Supplies liquid that simmers the vegetables and bacon into a smooth sauce.
Meat glaze
Adds concentrated savory depth and body to the finished sauce.

The step that matters

Rub the mixture through a fine sieve. Pressing the softened solids through a fine sieve forces out their pulp and thickens the sauce into a smooth texture. Skipping or rushing this leaves the sauce grainy and thin.

Flavor stand-ins for the shallot

How well each one fits the dish's main ingredients (tomato, butter, meat):

  1. Potatobetter flavor fit
  2. Capsicumbetter flavor fit
  3. Onionbetter flavor fit
  4. Shallotthe original

Fit is the average pairing score against tomato, butter, meat. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
