Ingredients

Directions

Make the lemon base

  1. Dissolve the isinglass in 2 cups of water and strain it.

  2. Add the juice of the lemons, the grated rind of half a lemon, and the castor sugar. Stir well.

  3. Boil the mixture in an enamelled saucepan for about 10 minutes, then strain it again.

  4. Let it cool until it begins to thicken.

Whip and set

  1. Whisk the egg whites to stiff peaks and fold them into the lemon mixture until it is white and spongy.

  2. Pour the mixture into a mold that has been chilled in cold water.

  3. Let it set in a cool place, then turn it out and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the liquid into a sliceable jelly as it cools.
Egg whites
Whipped into foam to create the light, spongy, airy texture.
Castor sugar
Sweetens the lemon mixture and balances its acidity.
Lemons
Provide the juice for sharp lemon flavour and acidity.

The step that matters

Folding the whipped egg whites into the cooled lemon mixture. Whites must be whisked to stiff peaks and the base only partly thickened. Folding gently keeps the air trapped, so the sponge stays light instead of deflating.

Swap the lemon
